Christmas Eve in the mountains is a unique experience filled with peace and reflection. While snowflakes silently fall outside, the evening begins for many with preparations for the festive Christmas service. Chapels and churches, beautifully decorated, glow with the warm light of candles, creating an atmosphere that touches the heart.

Back home or gathered with friends and family, the highlight of the evening is the Christmas dinner. Traditional regional dishes, often simple yet full of flavor, reflect the values of gratitude and togetherness.

After the meal, the nativity scene is completed with the figure of the Christ Child, and the exchange of gifts brings joy and wonder, especially to the little ones. In many families, Christmas carols are sung or stories are shared, as the scent of pine branches and candles fills the room.

At the Hubertus the festive spirit reaches its peak on December 25th, with our Christmas celebration on the Hubertus Terrace. Under the open sky, lovingly decorated tables await you, offering fragrant tea, mulled wine, punch, Christmas cookies, "Zelten," and traditional Christmas “Stollen”. As a special highlight, each Hubertus guest family receives a Christmas gift – a token of our gratitude and joy in sharing this special moment with you.

"Cooking is like a journey through taste and tradition," says Chef Antonio. He invites us into the aromatic world of his kitchen where local ingredients are not just cooked, but celebrated, revealing how a deep connection with food elevates every dish he crafts.

Serves: 4 | Time: 2.5 – 3 hours

INGREDIENTS

800 g beef cheek
100 g tomato
100 g onion
80 g carrot
60 g celery (stalk)
30 g tomato paste
½ l red wine
½ l port
½ l beef stock or water
1 clove garlic
2 juniper berries (crushed)
4 slices dried mushroom
1 sprig thyme
1 sprig rosemary
1 sage leaf
½ bay leaf
1 tbsp. cold butter
4 tbsp. oil
Salt and pepper

Season the beef cheeks with salt and pepper and sear them in hot oil in a deep pan on all sides. Then remove the meat from the pan. In the same oil, sauté the onions, carrots, and celery until lightly browned. Add the tomatoes and tomato paste and sauté briefly. Deglaze with red wine and port, scraping the cooking residues from the bottom of the pan.

Return the meat to the pan and let the liquid reduce almost completely. Then add the beef broth (or water). Add juniper berries, thyme, rosemary, sage, bay leaves, garlic, and dried mushrooms. Cover the pan and let it stew in the oven at 160-180 degrees Celsius for 2.5 to 3 hours, turning occasionally.

Strain the sauce through a sieve, bring to a boil, and reduce for 10 minutes until it reaches the desired consistency. Finish with cold butter and adjust seasoning. Slice the braised beef cheeks, serve with the sauce, and garnish with fresh herbs.

Sustainability is a philosophy we live by, which is reflected in our use of natural resources. A central element of our environmental strategy is the management of our wood chip plant, which plays a key role in our energy supply. The wood chips are obtained from damaged wood that is carefully collected from the surrounding area. This process not only allows us to utilise energy from renewable sources, but also helps to keep the forests healthy by removing damaged and diseased trees.

To close the cycle of sustainability, we make investments in reforestation projects within the municipal area. Trees that are used for energy generation are replaced by new ones, thereby maintaining the natural balance of flora and fauna. These reforestation initiatives are an essential part of our efforts to minimise the ecological footprint of our hotel and preserve nature for future generations.

A bike tour from Olang to Lake Braies is a real highlight for nature lovers and cycling enthusiasts. The route leads through the picturesque landscape of the Dolomites and offers breathtaking views of the surrounding mountains.

The route is about 20 kilometres long and requires a medium level of fitness, as it also includes some ascents. There are numerous opportunities to take a break and enjoy nature along the way. The section beside the river is particularly attractive, where the babbling of the water provides a calming backdrop.

Lake Braies itself, often referred to as the ‘Pearl of the Dolomites’, is the crowning glory of the tour. This lake is famous for its intense turquoise-coloured water and the dramatic mountain backdrop reflected in the clear water. Once you reach your destination, you can relax on the lakeside, hike around the lake or stop off at one of the local restaurants to enjoy traditional South Tyrolean dishes.

In summer, we recommend starting early in the morning or late in the afternoon to avoid the crowds as much as possible.

Brunico, a charming little city in the heart of the Puster Valley, offers visitors a fascinating mix of cultural diversity and local tradition, especially at its lively markets. The Monte Specie on the Prato Piazza is a popular hiking destination in the Braies Dolomites. The summit is most easily reached from the Prato Piazza car park, which lies at around 2,000 metres above sea level. This high plateau is known for its stunning panoramas of the surrounding mountain ranges, including the famous Three Peaks.

This moderately difficult hike leads through alpine meadows and sparse forests, following a well-signposted route. The summit of the Monte Specie, which lies at an altitude of 2,307 metres, offers a spectacular view of the entire Braies Valley as well as the more distant peaks of South Tyrol.

In addition to the impressive mountain scenery, the area is also known for its flora and fauna. In spring and early summer, numerous alpine flowers bloom on the meadows of Prato Piazza. The fauna is also richly represented with a variety of bird species and typical alpine animals such as marmots.

The inspiration for the drink came last summer, driven by a preference for basil in cocktails and influenced by the excellent Gin Basil Smash created by Jörg Meyer at the Lion Bar de Paris in Hamburg in 2008. This cocktail sparked an interest in the combination of basil and cucumber, which led to the idea of combining these ingredients in a homemade syrup.

In order to give the mixture an additional visual and taste accent, consideration was given to how the green colour of the syrup could be intensified by an additional component. The decision was made to integrate a mango mousse, which is not only visually appealing, but also complements the herbal, botanical flavour of the syrup with a fruity note. When developing the recipe, the challenge was to balance the proportions of the ingredients to ensure that all components work harmoniously together. The result is a cocktail whose colouring is a reminder of the green of nature and the bright summer sun.

The Skyscraper at Kronplatz is a spectacular giant swing that offers thrill-seekers a unique experience high above the South Tyrolean mountain landscape. A cable hoist lifts you to about 15 meters in height. Once at the top, you unhook yourself, and the extraordinary swing adventure begins. This is not for the faint-hearted.

Did you know that the Hotel Hubertus already exists since 1984? At that time, it was a small guesthouse with only a few rooms. In order to increase the occupancy rate, the Gasser family founded two travel agencies for bus tourism in 1992. Gradually, renovations and extensions were carried out. Already in 1994, the first investment in sustainability was made and a wood-chip heating system was built. An absolute highlight of the hotel is the Skypool, which was completed in 2016. However, this amazing construction was not the end of the expansion work. It was followed in 2022 by the construction of the free-floating wellness platform Heaven&Hell with its relaxation room. A unique architectural masterpiece.

900 g      flour "00"
100 g      wholemeal flour
5 g          fresh yeast
30 g        salt (fine)
580 ml    water
30 ml      extra virgin olive oil

Preparation:

• Dissolve the yeast in the water
• Mix it with the flour
• Add salt
• Add olive oil
• Leave it to rest for 20 minutes at room temperature
• Form dough pieces (approx. 250g)
• Leave the dough to rest at room temperature for 5 hours
• Roll out the dough
• Cover it
• Place the dough into the oven (approx. 20 minutes at 200° - depending on the thickness of the dough)

"Taking a bath in the atmosphere of the forest". This is how the Japanese health trend Shinrin Yoku can be translated - or simply: forest bathing.

Who doesn't know the revitalizing feeling that comes over you when you breathe in the fresh air during a short walk in the forest and immediately feel much more relaxed and balanced? The forest has an enormous healing potential, because in addition to relaxation, it provides stimulation without being too demanding. In a mindful interaction with the forest, one can rediscover one's natural balance.

Here are three exercise suggestions for you:

1 Feel your roots

Find a comfortable place in the forest, where you can stand safely and steadily. You are also invited to take off your shoes. Close your eyes. Now consciously pay attention to your breath flow and feel how you absorb energy from the forest air with each inhalation and how you let the blockages and stress flow away with each exhalation.

2 Sensory journey

For this exercise, too, first find a comfortable place. Breathe in and out deeply three times and then focus your attention on each sense in turn. What do you see? Look at the forest around you. Then close your eyes. What do you hear? Keep your eyes closed and then try to feel the forest atmosphere. What do you feel? Finally, take a few deep breaths. What do you smell?

3 Mindful walking at a snail's pace

Choose a path in the forest and move forward as mindfully as possible. Try to feel every movement - every step, every push and roll of the foot. Does the forest floor feel dry, damp, cold, warm, soft or uneven? What can you feel under your feet?

There is a cycle path through the entire Puster Valley, so nothing can stop you from going on a cycling excursion. There are no limits. Whether with an e-bike or a normal bike, the excursion will be an adventure. And the best thing about it: you can start directly from the bike rental in Olang/Valdaora. Here you can rent the classic bikes free of charge. For a fee, you can also rent super cool e-bikes there. During the bike tour, breathtaking panoramas reveal themselves, from rugged rock formations to picturesque alpine meadows that glow in the gentle sun. The silence of nature is only interrupted by the soft hum of the bicycle tire on the trail and the occasional ringing of cowbells, an unforgettable adventure in one of Europe's most beautiful landscapes.

All of us know that there is nothing as delicious as fresh bread for breakfast. It couldn't be a better start into the day. A good mood is pre-programmed! 🤗

The daily trip to the bakery is no more necessary. You can simply bake your own bread at home! As a part of our weekly programme, we will show you how to shape the bread loaves and bake them in a traditional bread oven. Of course, you can then also taste the homemade bread. 😋

To ensure that the bread is as delicious at home as it is at the Hubertus, here is the recipe:

Ingredients:

• 1 kg rye flour
• 200 g wheat flour
• 10 g of yeast
• ca. 3/4 lt water (lukewarm)
• 1 tablespoon of salt
• 1 tablespoon Bread clover (gypsy)
• 1 tablespoon cumin
• 1 tablespoon fennel

Preparation:

Mix the flour and spices, make a pit, add the yeast mixed with tepid water and knead everything into a soft dough. Then leave the dough to rest in a warm place for approx. 1-2 hours, shape it, place it on a floured towel and leave it to rest again for 30 minutes. Then bake the bread at 220 degrees for about 45 minutes.

There is nothing more grounding and inspiring than time spent in nature. Winter hiking opens our eyes to the essential things in life.

Sometimes we just need a little break. A little break from everyday life to reorganise our thoughts and recharge our batteries. Want to know what helps us? Wrapping ourselves up in warm winter clothes, getting our dog ready, and heading into the boundless nature that surrounds our hotel at Plan de Corones/Kronplatz. In our immediate vicinity there are countless beautiful winter hiking trails that take you into the solitude of the mountains. One of our absolute favourites is the legendardy Fanes Alm in the heart of the Dolomites. It almost seems as if the bizarre peaks, which tower far into the deep blue winter sky, are a trellis for the winter hikers. The impressive path winds its way from Pederü up to the Fanes Alm, where you can stop for a bite even in the coldest of seasons, before you make another detour to the Fanes Pass. The view that you get enjoy from up there … it fascinates even us South Tyroleans again and again.

It must reach the ceiling, be finely dressed, and not be perfect. Know who we're talking about? The Christmas tree, of course, which belongs in every good parlour at Christmas time.

Every year, we get excited like little children as we start looking for the perfect Christmas tree. Needless to stay,  we always find it in our local forest, as it’s not only in our cuisine that we place great value on regionality. Our tree is a real South Tyrolean, so to speak, which reaches the ceiling of our hotel in Olang. Growing Christmas trees is a science in itself in South Tyrol, as is the date of felling the tree, which ideally takes place after full moon. Once the natural beauty is set up in the parlour, we give free rein to our creativity. Sometimes we go for Tyrolean simplicity, other times for dazzling glamour – just let yourself be surprised in which garment our Christmas tree will be awaiting you this year. We have a tip for all those who would like to bring a piece of South Tyrol home this year: decorate your Christmas tree according to old South Tyrolean tradition – with real South Tyrolean apples, (home-made) gingerbread, stars made of straw, and red candles. This Christmas tree not only delights the eye, it also pampers the palate.
